Delicious Chicken Tacos That Are Two Meals In One!

I am always on the lookout for great chicken dinners and this one will not disappoint!
My friend Brenda, told me just how simple and flavorful these Chicken Tacos were and she was right. I liked them so much, I turned the leftovers into a delicious Green Chili Chicken Soup. So cook once and eat twice and have 2 delicious dinners for your family in about 20 minutes!!

Chicken Tacos with Spicy Green Chili Sauce
5-6 skinless boneless chicken breasts
1 32 ounce can green chili enchilada sauce, medium heat
1 onion chopped finely
1 clove of garlic crushed
Salt and pepper

Taco Dressings
Shredded cabbage
Diced tomatoes
Shredded cheese
Avocado slices
Corn or flour tortillas

Salt and pepper meat. Place all ingredients into a crockpot set to high heat, cook for 4 hours until meat is falling apart. Shred meat into green chili sauce. Spoon into tortilla and dress as desired. Reserve remaining chicken and juices for Green Chili Chicken Soup

Green Chili Chicken Soup
Remaining chicken and sauce from Chicken Tacos
1 tablespoon olive oil
1 menuim onion diced
2 stalks of celery chopped finely
1 red or green pepper diced
1 clove garlic crushed
1 can chicken stock
1 ½ cups water
1 can rotel tomatoes and green chills
¼ cup quick cooking brown rice or barley
1 cup frozen corn
Salt and pepper

Soup Garnish
Cilantro
Sour cream
Monterey Jack cheese
Tortilla chips

Add olive oil to a large stock pot over medium heat. Add onions, celery, peppers, salt and pepper. Cook for 5-7 minutes until onions are clear. Add garlic, remaining chicken and sauce from tacos and all ingredients except for corn. Bring to a boil, reduce heat and simmer for 15 minutes. Add corn just before serving with Cilantro, sour cream, cheese and tortilla chips.
