When temperatures hover near or above the 100 degree mark, it is tough to think about preparing another hot meal for dinner. That is the perfect time to serve my tasty chicken salad over a bed of greens or on a sandwich bun for dinner.

Chicken Salad with Fruit and Nuts
3 chicken breasts baked and cubed
½ cup light Hellmann’s mayonnaise
1 cup chopped dried apricots
½ cup dried cranberries
½ cup toasted pecans chopped
2 stalks celery finely chopped
2 tablespoons onion finely minced
½ teaspoon freshly ground pepper
Combine all ingredients in a bowl until mixed well. Serve over salad greens or on toasted bread.
