I don’t know about you, but it seems like Thursday is the hardest day of the week to cook dinner.
I am usually ready for the weekend and running short on ideas.

The vivid green color lets you know it is super fresh and believe it or not, this is the best way I have found to serve spinach to kids, they gobble it down!
Spinach Pesto Pasta
3 packed cups fresh baby spinach
1 pound of cheese stuffed tortellini or penne pasta
4 ounces cream cheese
1 clove garlic
½ cup grated parmesan cheese plus more for garnish
Salt to taste
¼ teaspoon crushed red pepper
Boil pasta in salted water until al dente stage, drain pasta and reserve ½ cup of cooking water. Combine spinach, garlic, parmesan cheese and cream cheese in food processor until it is creamy. Add spinach pesto to pasta and a small amount of pasta water to loosen the sauce. Sprinkle on additional parmesan cheese and crushed red pepper.
