Roasted Chicken and Chicken Quesadillas

Cook Once Eat Twice Mondays continue with juicy Herb Roasted Chicken and scrumptious Spicy Chicken Quesadillas, two simple and tasty ideas to help you get dinner on the table this week. Fresh herbs give this chicken unbeatable flavor making leftovers super versatile for any soup or casserole dish. It does not get any easier than this!

Herb Roasted Chicken

4 split chicken breasts with skin on, on bone
1 teaspoon olive oil
3 sprigs fresh rosemary
3 sprigs fresh thyme
Salt and pepper

Preheat oven to 350 degrees. Rub chicken with olive oil. Salt and pepper generously. Chop herbs coarsely and sprinkle over the e top. Roast chicken uncovered for 35-45 minutes until chicken is golden brown.

Spicy Chicken Quesadillas

1 chicken breast cooked and shredded
¾ cup salsa
½ cup shredded cheddar cheese
½ cup frozen corn
½ cup black beans from a can
2 tablespoon finely chopped onions
1 teaspoon cumin
1 teaspoon chili powder
½ teaspoon garlic salt
8-10 flour tortillas
1 teaspoon olive oil

Add all ingredients, reserving tortilla, to a medium bowl and mix well. Heat a grill pan over medium high heat. Brush grill will olive oil. Place tortilla on grill and warm, flip and add ½ cup filling to tortilla, place second tortilla on top sandwich style. Heat until tortilla is beginning to brown, flip to grill the other side. Repeat until all tortillas have been filled. Slice in wedges using a pizza cutter, serve with salsa, guacamole and sour cream.
