A Classic Line Up For The Super Bowl

Are you ready for some football? This Sunday New Orleans will host the San Francisco 49er’s and the Baltimore Ravens in biggest game of the year. Be ready for Super Bowl fun with some classic appetizer recipes your friends and family are going to love. My Buffalo Chicken Skewers are a lighter version of the original, dipped in homemade Blue Cheese Dressing and served with celery, they will not disappoint! Spinach and Artichoke Dip is a must at any gathering and this one is the best served with pita chips or French bread and my amazing Double Chocolate Chip Cookies are good enough to warrant a happy dance in the end zone! Can you say touchdown!

Buffalo Chicken Skewers
1 ½ pounds chicken tenders
½ cup Louisiana hot sauce
1 tablespoon white vinegar
2 cloves fresh garlic pressed
1 tablespoon Worcestershire sauce
½ teaspoon salt
1/8 teaspoon cayenne pepper
12-16 bamboo skewers, one for each tender
1 tablespoon olive oil

Soak the bamboo skewers in water for an hour. In a bowl mix all ingredients before adding chicken to the bowl. Toss chicken to be sure it is coated well with buffalo mixture. Skewer a chicken tender in a back and forth motion onto each skewer. Coat grill pan with olive oil and place over medium high heat. Place skewers onto grill pan cooking chicken 4-5 minutes on each side until done. Serve with blue cheese dressing and celery.

Blue Cheese Dressing
½ cup buttermilk
½ cup sour cream
1/3 cup mayonnaise
3 tablespoons red wine vinegar
1 clove fresh garlic pressed
1/3 cup blue cheese crumbles
Salt and pepper to taste

Combine all ingredients in a bowl reserving half of the blue cheese. Whisk very well until mixture is smooth. Add remaining cheese and serve.

Hot Spinach and Artichoke Dip
6 ounces cream cheese
½ cup sour cream
½ cup mayonnaise
½ cup parmesan cheese
2 cups chopped frozen spinach drained well
1 14 ounce package frozen artichokes
2 cloves garlic pressed
1/8 teaspoon salt
1/8 teaspoon cayenne pepper

Preheat oven to 350 degrees. Mix all ingredients reserving ½ of the parmesan cheese. Spread dip into a buttered glass baking dish. Sprinkle top with remaining parmesan cheese, bake for 25 minutes or until bubbly.

Double Chocolate Chip Cookies
10 ounces Ghirardelli 60% cocoa bittersweet baking bars cut into pieces
1 stick butter room temperature
1 cup brown sugar
½ cup sugar
4 eggs at room temperature
1 teaspoon vanilla
2 ¼ cups flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 bag Ghirardelli semi-sweet chocolate chips
1 cup pecans or walnuts coarsely chopped

Melt bittersweet chocolate in microwave in 30 second intervals stirring in between. Using an electric mixer, cream butter and sugars together until it is light and fluffy. Add eggs one at a time and vanilla. Add melted chocolate to the butter mixture. Add dry ingredients slowly until all is incorporated. Stir in chocolate chips and nuts. Refrigerate dough for 1 hour. Preheat oven to 350 degrees. Drop dough by teaspoonful’s and bake for 12-15 minutes.
