Recipe for Fun Fruity Roll Ups

I have had a BLAST teaching kids to cook this summer! One of the recipe favorites was a BONUS…
1 3 ounce package of jello any flavor (sugar free does not work)
1/2 cup water
1 1/2 cups miniature marshmallows

Grease a 8×8 glass dish and a microwave safe bowl with non stick cooking spray. In a separate bowl, mix jello and water and microwave for 30-40 seconds and stir until jello has dissolved completely. Place marshmallows in the greased bowl and microwave for about 20 seconds or until they begin to puff. Stir quickly and whisk into jello mixture. Pour immediately into prepared dish and refrigerate for about an hour. Run a butter knife around all the edges and pull fruity sheet out of dish. Roll up jelly roll style and slice into strips.
