Happy Cooking with Giada De Laurentiis

It was fun meeting Giada at the Majestic Theater in Dallas on Friday night.  She signed her new book Happy Cooking, answered questions and even took a little time to pose for the camera!  The book has many new recipes and beautiful photography.  Her chapter, Eating Clean, represents a diet she reverts to from time to time to keep her trim figure.  Don’t worry there are plenty of luxurious new dishes to try as well.  I am looking forward to digging in!

 

See m Tomato Basil Pasta recipe below.  This recipe has become a classic at my house and was inspired by Giada!  Do you have any dishes inspired by Giada?  if so please share!

 

Tomato Basil Pasta

1 16 ounce package of penne pasta

1 pint cherry tomatoes halved

2-3 cloves garlic

One package of fresh basil or 5-6 sprigs from your garden

6 ounces fresh mozzarella cheese cut into cubes

2 tablespoon Parmesan cheese

¼ cup olive oil

 

Cook pasta in salted water to the al dente stage.  Heat olive oil and whole garlic cloves in a large chef’s pan for  2-3 minutes.  Add crushed red pepper and continue to cook for another minute.   Add cherry tomatoes and cook until heated through.  Add fresh basil.  Remove garlic cloves and add pasta to the pan.  Toss pasta to coat with light sauce.  Salt to taste.  Add fresh mozzarella, sprinkle  with Parmesan cheese.
