Double Chocolate Bourbon Pecan Pie

Double Chocolate Bourbon Pecan Pie, now that is a mouthful!  Pecan Pie has never been a favorite of mine because if it’s not chocolate, I’m not interested.  Easy fix… create a pecan pie that has chocolate AND bourbon added for an ooey gooey center and cookie style crust that is out of this world. Double Chocolate Bourbon Pecan Pie is the perfect dessert for Thanksgiving dinner and will definitly be gracing my table. Enjoy!

Double Chocolate Bourbon Pecan Pie

Chocolate Pate Sucree

For 1 crust

1 cup plus 2 tablespoons flour

2 tablespoons dark cocoa

8 tablespoons butter cubed and chilled

¼ sugar

2 tablespoons cream

Filling

¼ cup butter

2 ounces unsweetened chocolate

3 eggs

½ cup sugar

¾ cup dark corn syrup

1 teaspoon vanilla

¼ cup bourbon

¼ teaspoon salt

1 ½ cups whole pecans

Preheat oven to 350 degrees.  Prepare pate sucree by combining dry ingredients in a food processor.  Add butter and process until mixture is coarse and crumbly.  Add cream and process until mixture mostly comes together.  Check dough if it will compress it is ready if it is still dry add 1 more tablespoon of cream.  Turn dough out onto waxed paper, form a disc and refrigerate for at least 30 minutes before rolling and pressing into pie plate.  Prepare filling by melting butter and chocolate in the microwave.  In a medium bowl, beat eggs until frothy, add sugar and beat well.  Add syrup, vanilla, bourbon and salt and mix well.  Add cooled butter mixture to the filling and combine. Place pecans in the bottom of the crust.  Pour filling on top and bake for about 45 minutes until knife comes out clean.
