Make Your Own Vanilla Extract

Crafting your own vanilla extract is fun and easy.  Homemade vanilla makes a wonderful gift from the kitchen too!

I make vanilla in large batches since I use so much of it in my cooking school.  Let vanilla beans steep for an entire year before using it for a strong vanilla flavor.  If you want to rush the process, shake your bottles a few times a day.

For recipes calling for vanilla seeds, pull the steeped pods out of the liquor, snip off the tip of the bean and squeeze the fresh vanilla bean paste right out into your recipe.

I am excited to share my source for the best quality Madagascar beans at a great price.  Beans should be subtle and oily not dry and woody.

1/2 pound, roughly 50 beans

1/4 pound, roughly 25 beans

Vanilla Extract

1 large bottle of Vodka

2 tablespoons Bourbon

20 vanilla beans

Open vodka and remove about 1 ounce of liquid.  Add Bourbon and vanilla beans to bottle.  Let stand in a cool dark place for 3 weeks-1 year.
